Lentil celery soup

    2 cup chopped onion (4 small ones)
    2 T olive oil
    1 T crushed garlic
    cumin, paprika, tumeric, sage
    2c chopped celery

    6 c water
    1 c lentils

    1 tomato


in frypan, saute onion and celery in olive oil, add garlic and seasonings when they are soft, saute another few minutes. Stir in 1 c water and turn off the heat.

in saucepan, boil 6 c water, add lentils and soup mix, bring back to boil, simmer 10 minutes covered.

Puree 1 c of frypan contents to thicken.

Add puree and frypan to saucepan, add 1 chopped tomato. Simmer until tomato softens.

Serving Size: makes 22 servings of 1/2 cup
