Introduction

low in calories and fat but this hearty powerhouse soup is loaded with flavor and vitamins and all things good with a pop of spice.

i had a whole lot of mushrooms that were on the edge. cook them or toss them. i never toss... i make SOUP!

this is a big 12 c pot of soup that will carry into left overs and can be froze.
i hope you enjoy this.

Ingredients

    2 c farro/spelt (precooked)
    1 c celery fine diced
    3 lg garlic cloves minced (i use roasted garlic)
    1 lg sweet white onion chopped
    2 c carrot peeled and chopped
    6 c mushrooms, fresh cleaned and fine sliced (white & brown)
    1 cup zucchini small cut cubed with skin
    1/3 c pumpkin puree (optional)
    6 c water
    3 tbls olive oil
    1/4 c basil fine cut
    2 c spinach chopped
    2 tbls spicy italian seasoning (tone's brand is what i use)
    1/4 tsp red pepper flake (less if desired)
    1 veg bullion
    1/4 tsp fresh ground black pepper
    salt to taste at end of cooking

Directions

pre cook farro (1 c farro/2.5 c water/dash of salt), boil water add farro, turn down to simmer, cover pot. cook 15 min. retain any left over water to be added to soup.

saute onion, celery, carrot 5-8 min in olive oil.
add garlic. 2-3 min
gently saute and mix into veg mixture another 5-8 mintues.

add water, cooked farro, remaining veg and spices.
simmer 45 minutes on low heat. let set a few hours to cool and let spices mingle.
reheat. serve!
