Introduction

Ingredients

    2 cups mixed dark an light cooked turkey
    1/3 cup raw pearled barley
    1/4 cup low sodium soy sauce
    2 cups red onion
    1 cup green onions
    1 cup leeks
    1 1/2 cups sliced carrots
    16 cups chicken broth
    2 10 oz packages portobella mushrooms

Tips

Use your favorite seasonings. I like to use bay leaves an thyme.

Directions

slice the green onions and leeks. Peel and slice the carrots, chopp the red onion. Heat the oil in a 12 quart pan, then add the onions, carrots, an mushrooms. Let soften an start to release their juices. Then add the broth an barley. Cook for 60 to 90 minutes, until barley is done.
