Andrea's Chourico Hash

Introduction

A quick and easy weeknight dinner or weekend breakfast. A quick and easy weeknight dinner or weekend breakfast.

Ingredients

    1 c. chopped green peppers
    1 c. chopped onion
    1 T. olive oil
    8 oz. Gaspars Mild Chourico, diced small
    1 bag of Steam in Bag Yukon Gold Potatoes (about 18.4 oz.), cooked, cooled and diced

Tips

I cook the potatoes when I wake up in the morning and allow them to cool before stashing them in the fridge. Serve with an egg on top for a complete meal.

Directions

Add olive oil and chourico into a pan on medium heat. Cook for 5 minutes, allowing the chourico fat to render out. Add the onions and peppers, cooking til tender, about 5 minutes. Add the cold diced potatoes and continue to cook until warmed through and crusty on the outside, about 10 minutes.

Serving Size: Makes four generous servings.
