egg white, fresh, 2 large
Milk, nonfat (skim milk), 2 tbsp
BREAD CRUMBS PLAIN 1 cup
Italian Seasoning, 2 tbsp
all purpose flour, 1/4 cup
JENNIE-O OVEN ROAST TURKEY BREAST 12 oz (Sliced into 6-2oz. portions
Olive Oil, 2 tbsp
Garlic, 3 clove
Tomatoes, Crushed,1 1/2 cup
Shredded Mozzarella Cheese, 1 1/2 cup
Cheese - Parmesan Grated Cheese, 1/4 cup
Heat oven to 350°F. In shallow dish, beat together eggs and milk. Place breadcrumbs and Italian seasoning in separate shallow dish. In recloseable plastic food storage bag, combine flour and pepper. Add turkey to bag, 1 portion at a time; shake to coat lightly. Dip in egg mixture, letting excess drip off; roll in breadcrumbs to coat lightly.
In large nonstick skillet, heat oil over medium heat. Add garlic; cook 1 minute. Push garlic to edge of skillet. Add turkey to skillet in batches. Cook the turkey as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Transfer cooked turkey to 13x9-inch baking dish. Repeat with remaining turkey.
Discard garlic; add crushed tomatoes to skillet. Simmer 2 minutes or until heated thoroughly. Spoon over turkey; top with mozzarella cheese and Parmesan cheese. Bake 15 minutes or until turkey is hot and cheese is melted. Sprinkle with basil, if desired.
