Chicken meatloaf

Introduction

This is calculated with generic ingredients. If you choose to use the heart healthy soup and reduced fat and sodium broth it would be an even healthier meatloaf. My husband thought this was the "Best meatloaf I have EVER had!" This is calculated with generic ingredients. Ingredients

    1 medium onion, chopped
    3 carrots, chopped
    1 cup chicken broth
    2 eggs
    1/2 cup bread crumbs
    1 tsp basil
    1/2 tsp salt
    1/2 tsp pepper
    1 1/2 pounds ground chicken
    1/2 pound ground country sausage
    1/2 cup oats
    1 can cream of mushroom soup
    1 Tblsp balsamic vinegar
    1 Tblsp grainy mustard

Tips

I served this with a pound of sliced mushrooms sauteed in butter and seasoned with a tablespoon of worcestershire sauce, teaspoon of basil, 1/2 teaspoon of oregano and some garlic powder.


Directions

In a medium saucepan bring the broth, carrots and onions to a boil. Reduce heat and simmer for 10 minutes or until vegetables are tender.
In a large bowl, beat eggs, add the bread crumbs, basil, salt and pepper. Allow to sit for about 5 minutes. Mix in the chicken, sausage, vegetables and oats.
Put into a 9x5 loaf pan and place in a 350 degree oven.
In a small bowl, mix together the soup, vinegar and mustard. Spread this over the meatloaf after 15 minutes and allow to bake for an additional hour to hour and a half until internal temperature reaches at least 165 degrees and no longer pink.

Serving Size: Makes a 9x5 inch loaf
