Creamy Corn Chowder



Introduction

This is a Kroger free mail ad recipe which I modified to be dairy free and gluten free. This is a Kroger free mail ad recipe which I modified to be dairy free and gluten free.
Number of Servings: 5

Ingredients

    1 T Earth Balance spread
    1/2 c chopped onion
    1/2 chopped celery
    1.25 cups water
    1 14.5 oz can no salt added cream corn undrained
    1 can no salt added corn, drained
    1 t xylitol or Stevia
    1 t vegan broth powder (chicken like)
    1 c So Delicious Coconut Milk Creamer - Original
    or other dairy free alternative
    1 T Bob's Red Mill Gluten Free Flour
    1 T minced dry parsley

Directions

1. Lightly spray a medium saucepan with cooking spray. Melt the Earth Balance over medium heat. Add onon and celery. Cook 5 minutes. Stir in water, potato, both corns, xylitol, broth powder, and salt or pepper if desired. Reduce heat to simmer 20 minutes.
2. Pour Coconut creamer in small bowl and whisk in the flour. Stir into the soup. Stir in the parsley. Simmer 15 minutes or until soup reaches desired thickness.

Serving Size: Makes 5 1 cup servings
