lentil barley vegetable soup

Ingredients

    1/2 cup of lentils
    1/2 cup of barley
    1 large carrot
    2 parsnips
    2 stalks of celery
    1 onion
    1 T. coconut oil
    6 - 8 cups of water
    season as you like.

Directions

saute onion, add the rest of the vegetables and sweat for a few minutes. Add water and simmer for 45 minutes
