Mini egg bites

Introduction

These are really easy and quick to make. A great think to make at the beginning of the week for breakfast for the week. These are really easy and quick to make. A great think to make at the beginning of the week for breakfast for the week.
Number of Servings: 12

Ingredients

    6 Eggs
    3/4 C Egg Whites or 4 Egg Whites
    2 C Grated Reduced Fact Cheese (about 6 oz, 3 oz per cup)
    6 slices of Canadian Bacon
    1 Tbsp fat free milk
    1/2 tsp pepper
    1/2 tsp paprika

Tips

Any spice could be added to the batter, with 1/2 the taste is very mild but be careful adding more as it could become overpowering


Directions

Greese a muffin tin & preheat oven to 375

Cut the Canadian Bacon into 4ths and evenly distribute to muffin tin (2 slices to each)

Grate 2 cups of cheese, evenly distribute to muffin tin

In a bowl beat eggs, egg whites, milk, pepper and paprika.

Evenly distribute to muffin tin

Place muffin tin into oven and bake for 20-25 min. They're done when a knife comes out clean of the center.

Serving Size: Make 12 muffins
