IntroductionWe used leftover mashed potatoes and mashed sweet potatoes from Thanksgiving for this recipe. Also the fresh vegetable that are left over from the vegetable trays. 1 cup Cheddar or Colby Cheese, Low Fat, shredded
2 tbsp Fresh Sage, chopped
3 tbsp Fresh Rosemary, chopped
6 tbsp Olive Oil
1 cup Carrots, raw, chopped
1 cup Cauliflower, raw, chopped
3 cup Mashed Potatoes
1 lb Lean Ground Beef (or Elk burger)
1 cup Brocoli, raw, chopped
I used leftover mashed potato, but you can make them ahead of time and freeze them for when you want to use them in any receipe or you can buy them frozen.
Saute chopped vegetables in a pan with hot olive oil. Transfer vegetables from pan to a baking dish. Cook beef (or Elk burger) in the remaining oil adding the fresh chopped rosemary and sage. Combine all ingredients in a baking dish adding 1/2 of the cheese and cover with the sweet potato/white potato mixture. Bake uncovered for about 25 minutes until hot all the way through. Add 1/2 cup of cheese to the top and bake or broil until brown and bubbly on top.
Serving Size: I used an 8" X 8" baking dish which was about 6 servings.
