Introduction

Ingredients

    2 c. vegetable broth
    3 c. chicken broth
    1/2 yellow bell pepper, minced
    1/2 orange bell pepper, minced
    2 large slices red onion, 1/4" thick, minced
    1 cubanelle pepper, minced
    1 jalapeno pepper, minced
    2 plum tomatoes, finely diced
    2 cloves garlic, minced
    2 springs each fresh herb - basil, tarragon, dill, rosemary
    4-5 springs each fresh herb - cilantro, thyme, oregano, chives
    salt and pepper to taste

Directions

I use bouillion cubes to make the broth, but you can use canned broth or homemade. Bring the broth to a boil with all herbs in it. Reduce to simmer, cover and simmer for 15-20 minutes.

Add the vegetables, bring to a boil again. Reduce and let simmer for another 20 minutes. Add salt and pepper to taste.

Remove the herbs. Ladle into bowls and serve with crackers if desired.
