Steph2003's Zucchini Lasagna

Introduction

As usual I found this recipe on SP, and changed it around to make it my own. As usual I found this recipe on SP, and changed it around to make it my own.
Number of Servings: 9

Ingredients

    1 large zucchini, sliced thinly
    1 medium yellow squash sliced thinly
    1 medium onion, diced
    1 large can of sliced mushrooms (or about 1.5 cup fresh)
    1 clove garlic minced
    16 oz Great Value Fancy Shredded Part Skim Mozzarella (about 2 bags)
    .25 cup Parmesan Cheese
    1.5 cup 1% Cottage Cheese
    6oz (9 pieces) No boil Lasagna Noodles
    2.5 cups Marinara Sauce (I use pizza sauce w/30 calories per 1/4 serving)

Directions

Makes 9 servings.


Preheat oven to 350 degrees. Spray 9x13 inch pan with non stick spray.



In a seperate bowl, mix parmesan cheese, half of mozzarella, all of the cottage cheese, and minced garlic. Mix well.


In another bowl, mix sauce, onions, and mushrooms.


Add a layer of sauce to baking dish. Add 3 noodles, then spread half of cottage cheese mixture over noodles. Add layer of zucchini.


Repeat layers once, then add thin coating of sauce to final layer of zucchini, and place the last 3 noodles on sauce, then cover with remaining sauce.


Sprinkle the other half of the cheese over the sauce, and cover tightly with foil.


Bake for 60-90 minutes. During the last 10 minutes of cooking remove foil to brown cheese. Cool for 10-15 minutes and serve.
