Number of Servings: 8

Ingredients

    2C dried shiitake mushrooms
    2C boiling water
    2 14.5oz cans diced tomatoes
    4C potatoes, diced
    1.5C onion, diced
    2C celery, diced
    3C carrots, sliced
    1TBSP garlic
    1C tomato juice
    1C boiling water
    1 packet concentrated vegetable broth (optional)
    12oz Morning Star Meal Starter Crumbles

Directions

Place shiitake mushrooms in crockpot with boiling water. Cover and let soak for 30min-1 hour. Remove and slice. Add back into crockpot.

Add rest of ingredients to crockpot. Cook on low 6-9 hours.

Add salt & pepper to taste.

Serving Size: Makes 8 2C servings
