My take on Asian pork stir fry. I substituted barley for the rice because it has a greater soluble fiber % and works well in a carb. conscience diet plan. My take on Asian pork stir fry. Number of Servings: 3

Ingredients

    6 oz. thin cut boneless pork loin chops, trimmed of all fat
    2 cups frozen stir fry vegetable blend
    3/4 cup medium barley , prepared
    1/4 cup soy sauce
    1 clove minced garlic
    pinch of salt and pepper
    3 tbs olive oil

Tips

Serve stir fry over cooked barley

Directions

prepare barley to package directions, trim and slice pork into thin strips. Season pork with a dash of salt and pepper then saute pork until cooked through, add minced garlic and frozen vegetables, stir fry until vegetables and tender crisp, stir in soy sauce.
