Introduction

I found this on the SP message boards, and modified it. I plan to make it for Christmas, but I decided to share it before then! Number of Servings: 108

Ingredients

    1 cup (16Tbsp) Smart Balance Light Buttery Spread
    1/2 cup Splenda Brown Sugar Blend
    1 cup sugar
    3/4 cup Egg Beaters, (equiv. 3 eggs)
    1 cup Jif Creamy Reduced Fat Peanut Butter
    1 cup Flour
    1 Tbsp Baking Soda
    1 cup Quaker Oats (Quick Cook)
    1 cup Hershey’s Milk Chocolate Chips
    1 cup Coconut, sweetened
    1 cup dried cranberries
    1 cup miniature marshmallows

    *Note original recipe called for 1 cup raisins, and 1 cup pecans, but I omitted those, and added marshmallows, and cranberries instead.

Directions

Preheat oven to 350.

Mix 'butter,' sugars, egg beaters, and peanut butter until creamy.

Add remaining ingredients and mix well.

Drop by spoonfuls on cookie sheet and bake for 10 minutes.

Makes 9 dozen.
