Introduction

I found this recipe and lowered the fat/calories. 1 Cup Egg Beaters could be used to lower the cholesterol, but it only lowers the calories by about 10 per serving. Number of Servings: 24

Ingredients

    1 C Heart Smart Bisquick
    1 onion chopped
    3/4 C GV Fiesta Blend Shredded
    1/2 C olive oil
    4 eggs
    3 C thinly sliced zucchini

Directions

Makes 24 servings
Mix all ingredients together and pour into a greased 9X13 pan or two 8X8 pans. Bake @ 350 for 30 min.
Freezes well. Can be reheated in the microwave or oven/toaster oven.
