Double Chocolate Coconut Cookies

Ingredients

    1 cup (2 sticks) unsalted butter, softened
    1/2 cup granulated sugar
    3/4 cup packed light-brown sugar
    2 large eggs
    1 teaspoon pure vanilla extract
    1 3/4 cups all-purpose flour
    1/4 cup unsweetened Dutch-process cocoa powder
    1 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon coarse salt
    2 cups white-chocolate chips
    1 3/4 cups sweetened flaked coconut
    3/4 cups coarsely chopped walnuts

Directions

Preheat oven to 350 degrees.

Soften butter, cream with sugars. Mix in egg and vanilla.

Stir in baking soda, baking powder, and salt. Add cocoa and flour and mix well. Stir in white chocolate chips, coconut, and walnuts.

Put parchment paper or wax paper on cookie sheets. Spoon out cookie dough, 1 TBSP dough per cookie, onto sheets and bake for about 10 minutes or until lightly set.

Remove from oven and let cool slightly before removing from pan to cool the rest of the way.
