Introduction

Creamy butternut squash soup with added fiber. Creamy butternut squash soup with added fiber.
Number of Servings: 6

Ingredients

    2tbsp. Olive oil
    4 cups chopped butternut squash
    1/2 cup white beans
    5 ounces reduced fat cream cheese
    2 cups water
    2 sodium free chicken bullion cubes
    Seasoning to your taste

Tips

This soup can also be used to make a delicious macaroni and cheese sauce.


Directions

Sauté butternut squash in olive oil until slightly tender. Combine water and chicken boullion, then add to pot. Cover pot and simmer until squash in tender. Add beans and cream cheese. Purée until smooth.

Serving Size: Makes 6 8 oz cups of soup
