Portuguese Chourico & Kale Soup

Ingredients

    2 Tbsp extra virgin olive oil
    3 large Yukon Gold potatoes, with skin, diced
    2 cups of chopped onions
    6 cloves of garlic, crushed
    2 bay leaves
    1/2 tsp saffron
    1 tsp sweet Spanish paprika
    1 Tbsp dried parsley
    1 pound of kale, coarsely chopped
    Salt and pepper to taste
    1 (15 ounce) can of garbanzo beans
    1 large can (24 ounces) fire roasted diced tomatoes
    1 pound chourico, casing removed and diced
    2 quarts of chicken broth

Directions

Heat oil in a pot (porcelain coated cast iron) over medium heat.

Add potatoes and onions and cook for 5-7 minutes, stirring frequently.

Add garlic, bay leaves, and kale to pot and cover. Cook 2-3 minutes to wilt kale.

Season with salt and pepper, then add beans, tomatoes, chourico, saffron, parsley, paprika, and broth.

Bring pot to boil, then cover and reduce heat to medium. Cook 10 to 15 minutes, until potatoes are tender.

Serve hot and enjoy the satisfied faces of your family and guests.
