1 - Leftover turkey carcass with meat and skin (drippings optional)
1 - extra turkey meat
1 - medium onion
5-6 stalks of celery
2 c. uncooked barley
4 cans chicken broth (I used low sodium)
salt and pepper to taste
Remove as much of the bones, skin, and fat as you can. I like to chill the soup after I have gotten the bones out in the fridge so it is easier to skim the fat off. Put back on to simmer and prepare the barley per its instructions. Add to the soup. Add salt, pepper, and other seasonings. Serve hot.
