1/2 cup canned pumpkin
1/2 cup quick oats
1/4 cup dry polenta
1/3 c. maple syrup
1-2 tsp. pumpkin pie spice (to taste)
1 1/2 c. hot water (adjust to desired consistency while cooking)
1 oz. pecans, chopped and toasted

Made with artificial sweetener + maple extract: 130 cal/serving.
