Hearty Bean Soup

Introduction

This is a really great soup meal for those cold days. Very filling. Low in fat.

Great for lunches so you have all day to burn off the carbs! :)

I made this because I was out of food and needed to use what I had in my pantry. Turned out really good! BUT, I didn't pay enough attention to times and measurements, so you may need to tweak the amount of liquid used and the total cooking time.

Number of Servings: 5

Ingredients

    1-can White Beans (with liquid)
    1-can Three Bean Salad (with liquid)
    1/2 an Onion
    1 Large Potato (multi-purpose)
    1-tbsp Olive Oil
    *3/4-cup White Rice, Long Grain (Instant)
    4 Bouillon Cubes (chicken)
    Dash of pepper
    Dash of salt
    Dash of thyme

    *Cooked separately and added at the end

Tips

Has no meat, though you could add cubes of ham.

I left mine fairly thick and poured it onto the rice in a bowl. It had a sweetness to it that I really enjoyed! Hope you enjoy it too!!


Directions

Chop potatoes into small bite size pieces.
Chop the onion into small pieces.

Add all ingredients (except rice) into a pan and bring to boil.
Lower to medium heat and cook for approx 45 minutes or until potatoes are done.

Add more water as needed depending on desired thickness.

This Soup can be very watery or it can be more of a thick stew. It's up to you!
