CRUSTLESS VEGE QUICHE

Introduction

This is just something I whipped together for dinner one night when I didn't know what to make. My toddler doesn't eat much meat so this was a good compromise between us. Plus this is also only 4 points per serving for those on the Weight Watchers Points Plus program. This is just something I whipped together for dinner one night when I didn't know what to make. Ingredients

    4 large Eggs
    1/4 c Mixed Vegetables (Broccoli, Cauliflower, Carrots) (or as desired)
    1/3 c Green Peppers (bell peppers),
    3-4 Baby Portabella Mushrooms, sliced
    1/3 c Onions,chopped
    3-4 tbsp Flour,
    1/3 c Milk, 2%
    1.5 c shredded Cheddar Cheese
    *Pam - Organic Olive Oil Spray (1second spray)
    1/2 tsp salt
    1 tsp pepper

Tips

Just go with what you like in your eggs and the rest will come out fine. I like to add a little chunky tomato sauce or salsa over the top to finish it off. In case you go overboard with the vege's like I do at times just add an extra egg to even out the mixture.


Directions

Preheat oven to 350 degrees. Lightly spray a 9" pie pan and set aside.

Thaw out vegetables in the microwave or cook them just till they defrost in a pot and set aside to cool.
In a bowl mix eggs, milk, salt and pepper.
Next add vegetables, green pepper, mushroom, onions, flour and cheddar cheese, mixing in between.

When mixed well pour into pan and bake for about 35 mins. Wait 10 minutes to slice and serve.
