In a 'microwave mug' melt (10-20 seconds)
1 Tsp butter - then swirl around in mug to coat sides
1/4 Cup ground flaxmeal
1/2 Tsp baking powder
1-1/2 Tsp sugar
2 Walnut halves - chopped
1/2-1 Tsp Cinnamon - or to taste
1 Egg - whipped prior to stiring into dried mixture
Place mixture into 'mug' and micro wave on high for 1 minute or until done (May have to adjust time required to microwave wattage).
When muffin is done, turn it out onto plate - serve with fruit.
Mix whiped egg well into dry mixture - or you will have egg pieces showing when baked.
