Tomatoes Stuffed with Chicken*, Red Pepper Puree* and Cottage Cheese/L0W CARB Breakfast

Ingredients

    2 tomatoes, large (3" diameter)

    3 oz [85 g] cottage cheese, 2% (about 4 generous tbsp)
    3 oz chicken, poached*, shredded
    1/4 c roasted red pepper puree*
    1 zucchini, small, grated
    2 tbsp chives, chopped
    2 tbsp basil, chopped
    freshly grated sea salt and black pepper to taste

    1/2 c lettuce, romaine, torn or shredded

Directions

Slice off the top of each tomato. Slice each tomato almost in half, leaving about 1/2' at the base. Continue to cut the tomato halves into quarters, leaving a base, so that each tomato is cut into 8 "petals". Salt lightly is desired, and set aside.

Grate the zucchini until you reach the seeds. Discard the seeded section. Press the grated zucchini between some paper towels to dry a bit. Mix the zucchini, cottage cheese, shredded chicken, and chives. Stuff each tomato with the mixture.

To serve, plate the lettuce, then place the tomatoes over the lettuce. Sprinkle with the basil and salt and pepper to taste.
