Salmon* Salad and Spinach Tart*/Low Carb Lunch

Ingredients

    3 oz salmon, poached*Base Recipe
    1/2 c lettuce, Romaine, torn or shredded
    1 cucumber, small, cubed (about 1 c)
    3 tsp lemon juice, fresh
    1/2 c yogurt, fat free
    1 tbsp dill weed, fresh, chopped
    1 spinach tart*Base Recipe

Directions

If salmon portion is frozen, place in refrigerator the night before. Flake the salmon and set aside.

Combine the lemon juice, yogurt and dill weed with an immersion blender.

To serve immediately: toss the lettuce and cucumbers with the dressing, place the salmon on top, add freshly grated sea salt and black pepper to taste.

To transport for lunch: place the lettuce, cucumber and salmon in a container with a lid. Pack the dressing separately, then dress and mix the salad when ready to serve.
