1/2 cup coconut flour
1/4 cup almond flour
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon grass-fed butter, cold
6 egg whites
Preheat the oven to 400 degrees F.
Grease a 6 muffin tray with coconut oil.
In a food processor add coconut flour, almond flour, salt, and baking powder. Cut in the cold butter til it looks like corn meal.
Put the egg whites in a blender and blend until the whites become fluffy.
Add the whites to the flour mixture and pulse until just the ingredients are completely mixed.
Fill each muffin tin hole equally with the biscuit batter.
Bake for 15 minutes or until the tops are nice and golden.
