Shrimp Cottage Cheese Salad with Spinach Tarts*/Low Carb

Ingredients

    2 spinach tarts*

    1 can shrimp [4/5 oz/128 g]

    6 oz cottage cheese, nonfat (about 8 tbsp)
    1/4 cup roasted red pepper puree*
    2 tbsp scallions
    1/2 c red pepper, chopped
    1 tsp lemon juice

    1/2 c romain lettuce, shredded or torn

Directions

Set out 2 spinach tarts to come to room temperature.

Open the can of shrimp and drain well. Set aside.

Mix the cottage cheese, red peppers, red pepper puree, scallions, and lemon juice.

Place the lettuce on a plate, pour over the dressing. Sprinkle the shrimps on top. Add freshly ground sea salt and black pepper to taste. Serve with the spinach tarts.
