Steak Casserole

Ingredients

    1 pound beef top round steak
    1/4 cup all-purpose flour
    1/4 teaspoon pepper
    1 Tablespoon olive oil
    1 cup sliced fresh mushrooms
    1 cup V8 vegetable juice, low sodium
    1/4 Tablespoon freeze-dried chives
    1 teaspoon ground thyme
    1/2 cup chopped onions reserve rest of 1/2 onions to mix with rice
    1 c brown cooked rice
    4 Tablespoons fresh cilantro



Directions

Trim fat from meat; place meat between 2 sheets of heavy-duty plastic wrap and flatten to 1/4 inch thickness, using a meat mallet or rolling pin. Cut meat into bit-size pieces. Combine flour and pepper in a shallow bowl. Dredge meat in flour mixture,
Heat oil in a skillet over medium-high heat. Add meat, and cook until lightly browned on all sides, stirring often. Transfer meat to a 1 1/2-quart baking dish. Add mushroom and remaining ingredients. Cover and bake at 300* for 2 hours.

Cook brown rice according to package direction. Add remaining 1/2 c raw chopped onions and cilantro to the rice. Spoon 1 cup steak mixture over 1 cup rice.

Serving Size: Yield : 6 1-cup servings
