Chicken Enchlidas

    10 oz chicken breast cooked and shredded
    1 2.25 oz can sliced olives
    14.5 oz can tomatoes and green chilies
    1 C fat free sour cream
    1 can fat free cream of chicken soup
    1 7oz pkg fat free cheddar cheese
    10 yellow corn tortillas


Cook chicken with desired spices - simmer slowly with a little chicken broth to keep moist - shred when done.
Wipe pan - spray with cooking spray and heat then add onions - cook until soft - add chicken, canned tomatoes and chilies and olives - heat through and reduce a bit.
Put sour cream and soup in sauce pan and heat through.
Spray 8x11 cooking dish with no stick spray - put apx 2 Tbls chicken mixture in each tortilla then add 2 Tbs of cheese - roll and place seam side down in dish
Pour sour cream/soup mixture over tortillas and sprinkle with any unused cheese
Bake 350 degrees for 30 minutes or until heated through - turn on broiler for final 1-2 minutes to brown if necessary

Serving Size: Makes 5 serviings-2 enchiladas per serving
