Scott's Favorite Chicken Enchiladas

Introduction

This is my husband's favorite enchilada recipe. I've lightened it up a little by using lower fat dairy products. This is my husband's favorite enchilada recipe. I've lightened it up a little by using lower fat dairy products.
Number of Servings: 8

Ingredients

    1/2 cup condensed cream of chicken soup
    1/2 cup light sour cream
    1 cup salsa
    12 oz cooked chicken breast, chopped
    2/3 cup mexican blend 2% cheese
    8 fajita-size flour tortillas

Tips

Substitute 98% fat free cream soup and save even more calories!


Directions

Combine cream soup, sour cream and salsa in medium bowl. Spray baking dish with nonstick cooking spray. Spread some of the salsa mix onto bottom of pan. Reserve 2 Tbs. of the cheese for the topping. Spread 1-2 tablespoons of the sauce onto a tortilla, top with 1/8 chicken down center and sprinkle with 1/8 of the cheese. Roll up and place seam-side down in baking dish. Spread remaining salsa mixture over all the enchiladas. Cover with foil and bake 25-30 min at 375 degrees. Uncover; sprinkle with remaining cheese and bake 5 min more or until melted.

Serving Size: Makes 8 Enchiladas
