Spaghetti Squash Pie

Ingredients

    1 onion chopped
    4 c kale
    1/2 spaghetti squash
    3 eggs
    1.5 c marinara sauce
    1 tbsp olive oil
    1/2 c shredded park cheese
    Salt and pepper to taste

Tips


Directions

Cook half spaghetti squash in over
Sauté onion and kale
Combine onion, squash, kale, eggs, marinara
Scoop half into casserole dish, spread half the cheese, put the rest in and top with remaining cheese
Bake at 425 for 35-45 minutes

Serving Size: Makes 6-8 servings
