Ingredients

    2T Olive Oil
    1 Onion chopped
    1 Fennel Bulb chopped
    1 lb Zucchini chopped
    1 head of escarole chopped
    2 ribs celery chopped
    3 cloves garlic diced
    1 can diced tomatoes with juice
    1 can of white beans rinsed and drained
    1lb lg shrimp peeled and deveined
    5 cups water
    oregano, salt and pepper

Directions

saute onion, fennel, celery,garlic , and seasoning in olive oil for approx. 10 minutes. Add escarole and zucchini, cook for another 10 minutes. Add tomatoes and water, cook for another 10 minutes. Add beans and shrimp and cook for another 2 minutes.

Serving Size: makes 8 2 cup servings
