Eggplant ala Lora

Ingredients

    Fresh Eggplant approx 1-1/4Lb.
    diced tomatoes 1 can
    4oz. swiss cheese
    Fresh Basil
    3 tbsp. grated parmesan cheese

Directions

Clean eggplant/slice and bake in 400oven for about 20 minutes or until brown. Layer in a square pyrex dish
Drain tomatoes and put on top of eggplant. Add 4 oz
grated swiss cheese; fresh basil and 3tbsp. grated parmesan cheese. Bake in 350 oven for 25-30minutes

Serving Size: 4 - 2x2 inch pieces
