Pub-Style Vegetarian Chili

    1/3 c. olive oil
    2 c. sliced mushrooms
    1 c. chopped onion
    1 c. chopped carrot
    1/4 c. chopped celery
    1 T minced garlic
    1 T chili powder (or more!)
    1 T ground cumin
    3/4 tsp ground black pepper
    3/4 tsp basil
    3/4 tsp oregano
    1 (28) can whole peeled tomatoes with juice
    3 c. black beans, undrained
    6 oz tomato paste
    1/4 c. red wine
    3/4 tsp hot pepper sauce (Frank's!)
    2 cups water


Mix and match vegetables and beans - still yummy!


Heat olive oil in large pot and cook mushrooms, onion, carrot, celery, garlic, chili powder, salt, pepper, basil, and oregano until oniln begins to soften. Add tomatoes with liquid, beans with liquid, tomato paste, red wine, hot pepper sauce and water. Bring to a boil, reduce heat, simmer until vegetables are tender (about 20-30 mintues)
