I love molasses based cakes and cookies. I redid a
recipe to make it with less sugar and fat. I still like this cake. It has 170 calories for a 3" square piece.

recipe to make it with less sugar and fat. I still like this cake. It has 170 calories for a 3" square piece.

Number of Servings: 15

Ingredients

    4 cups whole wheat flour
    1 cup cold applesauce unsweetened
    3/4 cup granulated splenda
    2 cups boiling water
    3/4 cup molasses
    1 tablespoon baking soda
    2 tsp cinnamon
    1 tsp ground ginger
    1/4 tsp nutmeg
    cooking spray

Tips

I can never eat just one portion.


Directions

For crumbs mix flour, applesauce, cinnamon, ginger, nutmeg and splenda with pastry blender. Set aside 1 cup of crumbs for the topping. Mix the boiling water, molasses and baking soda' , add the crumbs and mix well on low speed. Pour into 13" x 9" sprayed and baking pan. Sprinkle top with the cup of reserved crumbs. Bake at 350 45 min or until toothpick comes out clean.

Serving Size: makes about 15 3 inch square pieces
