Del Monte Diced Tomatoes, No Salt Added, 2 cans
White Wine, 1 cup
Orange Juice, .5 cup
Rosemary, dried, 2 tbsp
Boneless, Skinless Chicken (4 breasts or 8 thighs)
1 Sweet red or green pepper
Mushrooms, fresh, 2 cup
Olive Oil, 1 tbsp
Garlic, 1 clove
Dice all vegetables. Cut up chicken to one inch cubes. Saute chicken in olive oil to brown. Should be mostly cooked when finished. Add to tomato mixture. Saute vegetables until preferred tenderness. Add to tomato mixture. When chicken is completely cooked, serve over rice or noodles.
