Beth's Beans and Greens

Ingredients

    Collards, 10 cup packed (1 large bunch), deveined and chopped
    Garlic, 4 clove, sliced
    Red Ripe Tomatoes, 4 plum tomato, sliced
    Beans, great northern, 1.5 cup
    Olive Oil, .25 cup
    *Crushed Red Pepper, 0.25 tsp
    *Cooking Wine - white, 4 tbsp
    Pacific Natural Foods Organic Low Sodium Vegetable Broth, 1 cup


Directions

Heat oil in large non-stick skillet over medium heat. Add garlic and red pepper flakes and cook until garlic is lightly brown. Add greens by large handfuls, adding more as it starts to wilt down. Once all greens have been added, add broth and cover, let simmer for 10 minutes or until greens just tender. Add tomatoes and beans, simmer uncovered for about 2 minutes until some liquid has cooked off and beans are warm. Add cooking wine, let cook for a few more minutes.

Serve hot.
