Ricotta Stuffed Turkey Meatball

Ingredients

MEATBALL INGREDIENTS
1.25lbs ground turkey
1tsp black pepper
3tsp italian seasoning
1tsp onion powder
1tsp garlic powder
2oz liquid egg substitute (egg beaters)
1cup whole wheat bread crumbs
RICOTTA INGREDIENTS
3/4cup cottage cheese
3tsp shredded parmesan cheese
1tsp italian seasoning
Tips
Directions
In a medium sized bowl mix together ground turkey and liquid egg substitute. Then mix together seasoning and bread crumbs. Add the dry ingredients to the turkey and egg mixture and mix by hand until seasonings and bread crumbs are evenly distributed. Cover with plastic and place in refrigerator.
In a food processor combine cottage cheese, parmesan cheese, and italian seasoning. Process until mixture becomes smooth. Scoop into a piping bag(with a tip) and place in refrigerator.
Now you can remove the meatball mixture. Lightly grease a sheet pan. Make 18 meatballs and place on pan. Remove filling from regrigerator and begin piping mixture into meatball by inserting the tip into the meatball and squeezing the piping bag. Make sure to enclose the opening so as not to loose any filling while baking.
Place meatballs in a 350 degree oven for 20-25mins. Use a meat thermometer to make sure the meatballs reach 165 degrees internally.
Serve with a low sodium marinara sauce and whole wheat noodles for wholesome dinner or let them simmer in a crock pot with a low sodium marinara for a great holiday party appetizer.
