Vegetarian Stuffed Peppers ala Jenae

Ingredients

3 tsp chopped garlic
1 medium chopped eggplant
1 medium chopped onion
1 large chopped potato
1/2 cup fresh or frozen corn
1/2 cup frozen peas
1/2 cup cooked brown rice
1.5 cups water
4 green peppers, halved
1 cup TVP
2.5 Tablespoons nutritional yeast
Taco seasoning mix
2 Tablespoons steak sauce
3 tsp fresh grated tumeric
salt and pepper to taste, optional
Tips
Directions
Saute garlic, eggplant, onion and potato.
Add taco seasoning pack and water.
Cook until thickened and let cool.
Add corn, peas, cooked brown rice, TVP, nutritional yeast, steak sauce and tumeric.
Mix well and let sit until liquid is absorbed.
Correct seasoning.
Prepare enchilada sauce according to package directions.
Halve green peppers and stuff with filling.
Place in baking dish and pour enchilada sauce over the top.
Bake at 350 degrees for 30 to 45 minutes.
