Frangelico Meringue Cookies

Number of Servings: 36


    3 large egg whites, at room temperature (see Tip)
    1/4 teaspoon cream of tartar
    3/4 cup sugar
    1/2 teaspoon vanilla extract
    1 oz (2 tablespoons) Frangelico liqueur (or liqueur of your choosing!)
    optional: 1 T dark unsweetened cocoa powder


I make 1/2 chocolate and 1/2 vanilla meringues in each batch!

Change up the liqueur for fun flavor combinations.

Fold in finely chopped nuts for a fun surprise!


Preheat oven to 200.

Whip the egg whites until soft peaks form, then add the sugar one tablespoon at a time until you can get stiff, glossy peaks (in my kitchenaid this takes a few minutes- a handmixer would probably take longer). Add vanilla and whip for a few more seconds. Turn off mixer and fold in frangelico (and cocoa powder if you're using it!).

Drop by small spoonfuls or pipe onto baking sheet.

Let the cookies dry out for and hour to an hour and a half in the oven, then cool and remove from baking sheet (parchment paper or foil are your friends here). You can bake them for a shorter time at 250 if you prefer.

Store in airtight container at room temperature. If they get chewy, return to oven at 200 degrees to dry back out!
