Mashed cauliflower

    Cauliflower, raw, 1/2 head, large (6-7" dia)
    Cream Cheese, 1/2 package, small (3 oz)
    Butter, unsalted, 2 tbsp
    Milk, 2%, 1 tbsp
    Shredded Sharp Cheddar Cheese, 0.5 cup
    Feta Cheese, 1/4-1/2 cup
    Salt and pepper to taste.


The amounts are approximate since I was working by taste. Be careful not to add too much liquid or it will be runny.

This might be great with some chicken stock or the Knorr's concentrated stock. I also think it would be better with some sharper cheese but I used what I had on hand.


Cut up the cauliflower into smaller chunks.
Microwave the cauliflower, butter and milk in a microwave safe bowl for 4-5 minutes.
Stir to coat cauliflower and then microwave another 2-4 minutes.
Add to a food processor with the other ingredients and blend until smooth.
Add salt, parsley, or other seasonings to taste.

Serving Size: makes about 8 1 cup servings,
