Cheesy Spinach Bake

Introduction

I love creamed spinach but I wanted something I could just toss into the oven and not stand over the stove. Number of Servings: 8

Ingredients

    Spinach, fresh ~4 cups or frozen
    1/2 c chopped onions, optional
    Cream cheese, ~ 1/2 package
    Shredded cheese, I used sharp cheddar and parmesan
    2 eggs or 1/2 cup egg beaters
    2 tbsp flour
    1 cup cottage cheese
    Other cheese or seasonings as desired

Tips

The top didn't brown and bubble up as much as I'd like. It might be better to cut back on the cottage cheese because it adds a lot of liquid. It also doesn't melt that well and leaves lumps. I think next time I'll use more cream cheese and less cottage cheese.

Directions

Cook the fresh spinach down by microwaving for about 2 minutes. I placed the onions in with the spinach to soften them. If using frozen spinach, thaw it and then squeeze out as much water as possible.
Lightly beat the eggs, if using whole.
Add the remaining ingredients.
Stir.
Bake at 350 for 30 minutes.

Serving Size: makes about 8 1 cup servings
