Number of Servings: 138

Ingredients

    Ground beef (cooked, drained) - 33 oz after cooking
    Green Chiles (1 7oz can)
    1 green pepper
    1 red pepper
    1 onion
    No salt added diced tomatoes (4 14.5oz cans)
    2 cans (15.5oz) kidney beans
    1T oil
    Weight: 55oz + 52.7 + 30.5 = 138oz

Tips

I bet you could fry the onion and bell peppers with the beef and then only end up using a single pot. I decided after I finished cooking the beef that I wanted the fresh veggies so it was a 2-pot recipe for me.


Directions

Brown the beef, I did it in the pot.
Dice the onion and raw bell peppers
In a frying pan, cook the onion in the oil until mostly clear/browned, add the peppers and cooked until all 3 are soft.
While stirring the frying pan, add the cans of chiles, tomatoes, and beans to the pot of beef, stirring occasionally.
Add the cooked veggies to the pot of beef/tomatoes/beans.
Spice as you see fit. I used chili powder, cumin, and chipotle pepper.

Serving Size: My total weight was 138oz, and 1 bowl was 13oz
