Vegetable-Lentil Puree (serving = 300g)

Yummy Warming Soup Yummy Warming Soup
Number of Servings: 8


    Any Vegetables at all, to make 1 Kilo (2 lbs) total.
    I used:

    fresh tomatoes
    Swiss chard


Serve with a little bit of olive oil on top. Can be served with home made croutons, or with a spoonful of yogurt or sour cream.


Chop the vegetables into large pieces and place in a pressure cooker. Add rinsed and drained lentils. Add salt and water. Close the pressure cooker according to the instructions, and place on the stove. Start timing when the steam starts coming from the cooker. Cook for 20 minutes.
Let the soup cool and then puree with an immersion blender or in a traditional food processor.

Serving Size: makes 8 servings
