Introduction

Spicy Lamb Curry with vegetables over brown rice. Spicy Lamb Curry with vegetables over brown rice.
Number of Servings: 5

Ingredients

    1 lb. Lamb, cubed
    1 Sweet Potato, cubed
    1 Red Onion, cubed
    3 medium Celery Stalks, cubed
    3 medium Carrots, cubed
    Golden Curry Sauce Mix, (3 sections)
    2 TBL Ghee or Vegetable Oil

    *Cooked Brown Rice (3/4 cup per serving)

Directions

Brown lamb with ghee, onions, carrots, celery, potato.

Add chicken broth and simmer 15 minutes.

Break in curry sauce cubes and simmer another 5-10 minutes.

Serve over rice.

Serving Size: Makes 5 servings of lamb curry over 3/4 cup rice per serving
