What a simple recipe. Add a little hot sauce and this recipe is a perfect meal for nights when you don't have a lot of time or motivation to cook. Everyone loves a good burrito. The rice adds a great texture to a classic. I will make this again. Filling can be made ahead of time and taken for work. - 7/14/08

  • quick and easy is right. I used leftover rice and added 1Tbsp canned Mexican Corn w/peppers. Topped it with 2Tbsp Salsa and 1Tbsp Greek yogurt. AWESOME! Great for last minute. You can skip the oven for a soft burrito by warming everything in the microwave. - 6/6/14

  • LOVE finding easy recipes! Thank you! The only thing I wondered is if the calorie calculation was for .25 cup of cheese PER burrito like the directions mention, or .25 divided by 8 to fill the burritos. Just to be safe, I added calories for another serving of cheese per serving to my diet log. - 6/28/10
