Corn Maque Chou

Number of Servings: 6

Ingredients

    6 ears fresh corn
    1 Tbsp canola oil
    1 large onion, chopped
    1 green bell pepper, chopped
    1 garlic clove, minced
    2 large fresh tomatoes, diced (or 1 can no-salt added canned diced tomatoes, liquid drained)
    Tony Chachere's seasoning (about 2 tsp or to taste)
    3/4 cup skim milk
    pinch cayenne

Directions

Cut corn off cob and scrape cobs to get all of the juice. Set aside. Heat oil in a Dutch oven, add onion, bell pepper, and garlic and saute until tender. Add corn and tomato, season with Tony's seasoning and a pinch of cayenne, and cook mixture over medium heat for 30-40 minutes, stirring occasionally. Add milk from time to time to keep mixture soft.
