Wilted Chard

Introduction

Number of Servings: 4

Ingredients

    1 pound ruby chard, washed
    juice of 1/2 lemon
    2 tsp whipped butter*
    2 tsp olive oil
    2 shallots, minced
    2 cloves garlic, minced

Directions

With a knife, cut each leaf from the rib; roughly shred the leaves and chop the ribs. Steam the chard ribs 8-10 minutes, sprinkling them with lemon juice to prevent them from losing color.

Melt the butter & olive oil in a saute pan, add the shallots and garlic, and saute over medium heat for 2 minutes. Add the chard leaves and saute for about 2 minutes, until lightly wilted, stirring with tongs or 2 wooden spoons. Add steamed ribs, and toss to combine. Serve warm.
