Southwestern Corn and Bean Salad

Introduction

I love this because it's super quick and easy. I love this because it's super quick and easy.
Number of Servings: 8

Ingredients

    1 can corn, drained
    1 can black beans, drained
    1/2 cup salsa of your choice
    1 avocado, cubed

Tips

If no avocado, substitute green bell peppers for color.
Also good with tomatoes and/or red onions.
Cilantro makes a pretty garnish.


Directions

Combine all together except avocado. Add avocado last and stir gently.

Serve immediately; after a while the avocado will begin to discolor and get a little soft so leftovers still taste yummy but don't look pretty anymore.

Serving Size: Makes 8 half-cup servings.
